strawberry strata


this weekend i made an ice cream cake for the first time. it seemed like an ambitious recipe, but after a few months of cooking regularly and baking all sorts of things i felt like i was up for the challenge. it was one of the many VT recipes i really wanted to try. b's mom's birthday was this weekend so it seemed like the perfect occasion to whip it up.
first, i had to buy a springform pan because mine is packed at the bottom of a giant box marked 'kitchen.' not digging that out any time soon.
it is basically a layer cake. make a strawberry sauce from scratch with two pounds of strawberries, some orange juice, sugar and the smallest amount of balsamic vinegar. take some ladyfingers and line the inside of the pan and the bottom. then layer vanilla ice cream, strawberry sauce and ladyfingers until you run out. then sprinkle slivered almonds and crumbled chocolate cookies on top. freeze for at least four hours.
the verdict: everyone loved it. the only complaint? b thought it could use more chocolate cookie crumbles.
